PRODUCT DESCRIPTION

Few cuts of meat hit the sweet spot between looking impressive with extreme ease of cooking as this handsome Rack of Lamb.

Produced from the finest English lamb, naturally reared with the highest regard to diet and welfare. Cut from the prime part of the loin, our butchers trim this to avoid any waste and to maximise the visual appeal. The fat plays a crucial role in keeping it moist and succulent when cooked (we recommend browning it quickly in a pan, then roast until still just pink in the middle), and also in carrying the wonderful flavour.

Our Trimmed Rack of Lamb was award a prestigious star award from the Guild of Fine Foods at the Great Taste Awards 2023.

"This is a handsome rack, well-presented, cutting very well, and oozing with rich juices. although it has been trimmed of most of the fat. It is tender, almost melt-in-the-mouth, and sweet. How you cook and eat your lamb will affect how much caramelisation there is on the outside, but this had a good mouthfeel and a satisfying and lingering meaty taste."

COOKING INSTRUCTIONS

Oven Cook: From Chilled/Ambient. Preheat oven. Remove all packaging. Place in a roasting tin in the centre of the oven. Ensure the surface of the meat is thoroughly cooked. Leave to rest in a warm place for 10-15 minutes before carving. (Time 30 minutes each 500g Oven: 180°C, Fan: 160°C, Gas Mk 4)
