SHREDDED CHINESE DUCK PANCAKES WITH HOISIN SAUCE
Step 1 Preheat oven to 190°c fan
Step 2 Remove the duck from all packaging and put the contents of the bag, including any liquid, into a baking tray lined with foil.
Step 3 Cook for 25 minutes, or until golden. Baste with the juices in the tray from time to time. Once heated through, use two forks to pull the duck into shreds, and combine with any juices in the tray.
Step 4 Steam or microwave the pancakes according to packet instructions.
Step 5 To assemble, spread some hoisin on each pancake, load with some shredded duck, and add cucumber and spring onion to taste.
