This high quality caviar is extracted from the roe of the Acipenser Baerii Sturgeon. A medium sized fish weighing between 8 to 40kg, they were originally found in the fluvial basins of Siberia.
Grey to amber in colour with an egg size of 2.2-2.7mm the roe are harvested after a minimum 8 years. It has a marked and well rounded flavour. An excellent entry level caviar. All our caviar comes from one of the most highly regarded sustainable farms in Italy certified “GlobalGAP” and “Friend of the Sea”.
