Pit Beef Rolls with Tiger Sauce

Prepare the beef in advance and load up these beef-filled rolls when catering for a crowd. The mustardy sauce and thin raw onions gives it just enough bite.

Ingredients

1kg DukesHill sirloin roasting joint
- 3 tbsp salt
- 2 tbsp garlic powder
- 2 tbsp chilli powder
- 2 tbsp ground black pepper
- 2 tbsp smoked paprika
- 2 tbsp onion powder
- 2 tbsp herbs de provence
- 3 tbsp mayonnaise

2 tbsp Tracklements wholegrain mustard
- 3 cloves garlic, crushed
- 1 tbsp red wine vinegar
- 1 tsp worcestershire sauce
- 1 tsp white pepper
- 1 white onion, thinly sliced
- bread rolls to serve

Directions
Mix all the spices together in a large bowl and season beef on all sides with the seasoning.
- Light your barbecue and allow it to reach a medium heat . Place the beef on the barbecue and cook, turning occasionally, until it reaches your desired level of doneness - approximately 15-20 minutes for a medium rare. Remove from the grill and allow it to rest while you prepare the rolls.
- Mix together all the tiger sauce ingredients in a small bowl.
- To assemble the rolls, slice the beef thinly - always against the grain. Smother one side of the roll with tiger sauce and thinly sliced raw white onion. Place a generous portion of the beef on top. Place the other roll on top and serve!
