Developed by butter expert Grant Harrington after extensive research into Scandinavian dairy traditions, Ampersand is a slow-fermented, cultured butter made using pre-industrial techniques. The result is a salted butter with a beautifully rich, creamy flavour and a gentle acidity, much like the difference between crème fraîche and fresh cream.
