Step 1 Place the kipper fillets on a parchment-lined baking tray, skin side up. Place the tray under a hot grill for 4 minutes until the skin blisters, then turn over for a final minute. Set aside to rest.

Step 2 Lightly grill the halved bagel under high heat for 30 seconds until golden. Spread generously with cream cheese, then pile some watercress sprigs on top.

Step 3 Pull the kippers into large flakes, before topping with a spoonful of sauerkraut. Finally, squeeze fresh lemon juice over the top. The kippers will naturally season the dish.
