Crafted on Sparkenhoe Farm in Leicestershire by Jo and David Clarke, this award-winning cheese revives an old Red Leicester recipe using raw milk from their own Holstein Friesian herd. Each wheel is cloth-bound, lard-rubbed and matured for over four months, allowing the flavour to deepen and develop beautifully.
With its russet-orange colour, complex savoury notes and satisfying crumb, this is a true British territorial cheese with exceptional heritage and quality. A standout choice for any cheeseboard.
