4 burger¼ tsp turmeric
1 tbsp coriander leaves, chopped
1 tbsp butter, softened
½ avocado pear, chopped into small cubes
1 medium tomato, skinned, de-seeded and chopped into small cubes
1 green chillies, sliced thinly
¼ red onion, peeled and finely chopped
5g fresh coriander leaves, finely chopped
150g yoghurt
freshly ground black pepper
½ tsp salt
¼ tsp cumin seeds, toasted and crushed

2 flatbreads (or chapatis)

Spiced Mackerel with an Avocado & Tomato Raita

Trust me, this pairing is fab! Smoked mackerel has a strong flavour that works particularly well with spices. In this light and healthy recipe, the mackerel is especially delicious alongside the refreshing avocado & tomato raita with a chilli kick. The Raita - a yogurt dish that is an important part of North Indian cuisine - cools the spices delightfully, making this a delicious lunch or supper dish.

Directions

  1. Step 1 The smoked mackerel can either be grilled or BBQed. Make sure the grill or BBQ is nice and hot before cooking.

  1. Step 2 Begin by softening the butter, then mixing with the garam masala, turmeric and chilli flakes. Rub the spiced butter liberally all over the smoked mackerel fillets then place on a foil sheet. Close the foil to create a sealed foil parcel and put to one side whilst you prepare the raita.

  1. Step 3 For the raita mix all the ingredients together except the toasted, crushed cumin seeds and chilli powder. Mix well then sprinkle with the crushed cumin and chilli.

  1. Step 4 Preheat the grill to high and line a baking tray with kitchen foil or if bbq’ing then fire up the BBQ.

  1. Step 5 Place the bacon rashers in the hot pan and fry for 4-5 minutes until nice and crispy, turning them over halfway. Keep this pan ready for the burgers once you have put the bacon to the side.

  1. Step 6 If grilling place the foil wrapped fillets on a baking tray. Grill for 1 minute, or until the butter melts, soaking the spices into the warm fish. If bbq’ing then pop on the BBQ for 1 minute.

  1. Step 7 Meanwhile warm the flatbreads or chapatis according to their instructions.

  1. Step 8 Serve the mackerel immediately with the raita and warmed flatbreads or chapatis on the side.
