Royal Baerii caviar is derived from the Acipenser baerii sturgeon, a medium-sized species originally native to the river basins of Siberia. These fish are sustainably farmed in Italy and take at least 8 years to produce roe of notable quality and character.
Ranging from grey to amber in colour, the eggs measure between 2.2mm and 2.7mm and offer a delicate yet well-defined flavour profile. Smooth in texture and beautifully balanced, Royal Baerii caviar is a superb introduction to the world of fine artisan caviar.
