Our beef is certified PGI West Country Choice, from animals born and raised in one of the six counties. These cows enjoy grazing in lush green pastures for up to 3 years, resulting in consistently tender and flavoursome beef with melting qualities when cooked.

What is a Tomahawk Steak? The Tomahawk is a glorious cut of meat, which is a large ribeye steak with the rib bone left on, adding to the flavour and tenderness. This cut has a beautiful tender and buttery texture.

Preparing the steak for cooking. For the perfect results: Salt (& Pepper if desired) both sides of the steak and refrigerate for 6-12 hours. Then add your seasoning, rub or marinade and allow this to rest again for 3-6 hours. Before cooking, allow the meat to reach room temperature.

COOKING INSTRUCTIONS

Allow the meat to reach room temperature before cooking. For a beautifully browned crust, drizzle with oil and season, start this thick cut off in a smoking hot griddle pan before finishing in the oven (200°C, 180°C fan, gas mark 6). Alternatively, roast it first before transferring to the barbecue . The length of time in the oven will depend on how you enjoy your steak.

Keep refrigerated between 0 - 5°C. once open use within 24 hours. Suitable for home freezing, freeze on day of reciept .

REVERSE-SEARED BBQ TOMAHAWK STEAK WITH CHIMICHURRI

The reverse-sear method is ideal for getting the perfect degree of ‘doneness’ to a thick steak such as a tomahawk. It involves gently bringing the steak up to temperature until the centre is a few degrees lower than the final target temperature, then finishing it of quickly over a high heat to achieve a lovely, crusted exterior.
