There’s bacon, and then there’s DukesHill dry-cured back bacon. Our dry-cured back bacon is made without compromise. It is traditionally dry-cured by hand using the finest salt combined with demerara sugar, with no added water. The bacon flitches are allowed to mature naturally over several days in our drying rooms. This not only means there is no excess water and hence no white residue when cooked, but more importantly, the flavour and texture is second to none.
