It is traditionally dry-cured by hand using the finest salt combined with brown sugar, with no added water. The dry-cured back bacon is allowed to mature naturally over several days in our drying rooms. This not only means there is no excess water and hence no white goo when cooked, but more importantly, the flavour and texture of the resulting unsmoked bacon rashers are second to none.
