  1. Step 1 Place the pork belly in a large pan and add all of the ingredients. With the pork submerged, bring to a boil and simmer for one hour.

  1. Step 2 Remove the pork belly from the liquid, place on a board and pat it dry with paper towels. Score the skin and rub the 1 tbsp sea salt into the skin. Place uncovered in a fridge for a minimum of 4 hours, maximum of 24 hours to dry further.

  1. Step 3 Air fry for 40 mins at 230°c, turning halfway. Remove and allow to rest for 15 minutes before serving.
