Most mass-produced bacon labelled ‘dry cured’ is actually cured in a bag to retain water—resulting in that unpleasant white goo when cooked. Not ours. We use time-honoured curing methods and allow the bacon to dry naturally in our traditional drying rooms. The result? No excess water, no compromise on taste—just proper, flavour-packed bacon that cooks beautifully.
