A bold and historic dry cured ham matured for depth of flavour and finished with a distinctive black rind.

Product Description

A bold and historic Christmas ham, our Shropshire Black is dry cured, matured for depth of flavour and finished with its distinctive black rind. Made using a centuries-old recipe with molasses and spices, this cooked joint delivers firm texture and robust character — a festive favourite for true ham lovers.

Inspired by the legendary Bradenham Ham of 1781 - a recipe said to have travelled from Buckinghamshire to Wiltshire via a disgruntled butler - this heritage ham remains one of Britain’s most iconic cures. Crafted from outdoor-bred British pork, each joint is first traditionally dry cured, then steeped for two weeks in a rich marinade of molasses, juniper berries and warming spices.

This process imparts the ham’s hallmark black rind and its intensely savoury flavour, balanced with gentle sweetness and aromatic spice. After long maturation, the result is a firm, densely flavoured ham with exceptional depth and a distinctive festive flair.

Fully cooked and ready to serve, this artisan ham is perfect as a dramatic Christmas centrepiece, or sliced cold for Boxing Day buffets and charcuterie boards. A true celebration of Britain’s curing heritage, made for those who savour strong, complex flavours.
