Crafted by the Reade family using traditional methods and animal rennet, this cloth-bound cheddar is made with milk from a hardy mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows. The cheese reflects the seasons—winter batches are paler and may feature striking blue veining, while summer wheels offer a deeper golden hue.
The cows’ winter diet includes spent grain from the local Tobermory distillery, which gives the cheese its signature depth and slight whisky note. Aged for 12–18 months, this cheddar has a dense, slightly crumbly texture and a strong, tangy character that evolves on the palate.
