Traditionally dry cured, then marinated in molasses, juniper and warming spices before being matured for months, this fully cooked ham is savoury, firm in texture and effortless to carve.
First created in 1781 at Bradenham Manor in Buckinghamshire, the celebrated Shropshire Black recipe has been faithfully revived by DukesHill using time-honoured methods. Each ham is hand-prepared and dry cured before being steeped for two weeks in an intense, aromatic marinade of molasses and spices. This age-old process produces the ham’s hallmark black rind and develops its bold, complex flavour.
The hams are then air-matured to achieve a satisfyingly firm bite and a deep, savoury character that sets Shropshire Black apart. With the bone removed for ease, this midi version offers all the tradition, richness and authenticity of a classic Shropshire Black, while being ideal for smaller gatherings.
