Dry cured, marinated in molasses, juniper and spices, and matured for months, this fully cooked ham is savoury, firm in texture and ready to carve - a true Christmas showpiece.

First created in 1781 at Bradenham Manor, Buckinghamshire, this time-honoured recipe has been passed down through generations and revived by DukesHill. Each ham is traditionally dry cured before being steeped for two weeks in a robust marinade of molasses, juniper berries and aromatic spices. This process imparts the distinctive black rind and bold savoury depth that define this heritage ham.

The hams are then air matured for several months to develop their complex flavour and satisfyingly firm bite. With the bone removed for convenience, this version offers all the intensity of a traditional Shropshire Black with the added ease of carving, making it perfect for festive entertaining.
