First created in 1781 at Bradenham Manor in Buckinghamshire, this historic recipe has been passed down through generations and carefully revived by DukesHill. Each ham is traditionally dry cured before being steeped for two weeks in a robust marinade of molasses, juniper berries and aromatic spices, creating its distinctive black rind and bold depth of flavour.
The hams are then air matured for several months to develop complexity and a satisfyingly firm bite. With the bone removed for convenience, this version offers all the intensity of a traditional Shropshire Black ham with effortless carving.
