Panuozzo is a traditional Neapolitan-style pizza sandwich made from beautifully blistered pizza dough that’s baked and stuffed with charcuterie, cheese, and other toppings. It’s the ultimate portable picnic dish.

Ingredients
7g instant yeast
180ml warm water
1 tsp sugar
250g all-purpose flour
1 tsp salt
1 tbsp olive oil
½ ball fresh mozzarella

Directions
In a small bowl, mix the warm water, sugar and yeast. Allow the mixture to sit for 5 minutes until foamy.
In a large bowl, combine the flour and salt. Add the yeast mixture and olive oil. Bring the ingredients together until a rough dough forms. Either knead the mixture on a lightly floured surface or use the dough hook in an electric mixture and knead until the dough is smooth and elastic. Roll the dough into two balls and place it in a lightly oiled bowl. Cover with a clean tea towel and let it rest for 30 minutes.
Preheat the oven to the highest setting with a pizza stone inside if you’ve got it, or fire up the pizza oven if you have one.
Roll out one of the dough balls into a circle of approx 10-12 inches on a floured surface. Drizzle olive oil all over it. Fold it nearly in half, leaving a 1cm rim around the edge. Bake it folded over for 8-12 minutes in a conventional hot oven or 2-3 minutes in a pizza oven. Remove from the heat, before carefully opening it back out. Spread one side with Susie’s Chilli Jam and fill it up with layers of charcuterie, rocket and cheeses. Fold it back up like a sandwich and enjoy.
