The DukesHill Club Sandwich
Directions
-
Step 1 Cook the DukesHill Dry Cured Streaky Bacon in a frying pan over a medium heat until almost crisp.
-
Step 2 Brush both sides of the bacon generously with the Honey & Mustard Glaze, then cook for a final minute, turning once, until sticky, caramelised and lightly lacquered. Set aside.
-
Step 3 Lightly toast the Sherston White Loaf until just golden. Lay out 3 slices and spread one side of each with Bungay Butter.
-
Step 4 Spread Dijon mayonnaise onto one buttered slice, then top with Little Gem, sliced tomato and Wiltshire Ham.
-
Step 5 Spread Dijon mayonnaise onto the unbuttered side of a second slice, then place it mayonnaise-side down over the ham to create the middle layer.
-
Step 6 Top with the glazed streaky bacon and another layer of Little Gem. Spread Dijon mayonnaise onto the buttered side of the final slice, then place it mayonnaise-side down to finish the sandwich.
-
Step 7 Secure with cocktail sticks, trim the crusts if preferred, then slice into triangles to create the classic club sandwich. Repeat to make the second sandwich.
Chef’s tip
-
Step 9 The secret to a truly memorable club sandwich is glazing the bacon rather than the ham. The Honey & Mustard Glaze caramelises as it cooks, creating sweet, sticky, smoky layers that perfectly complement the delicate Wiltshire Ham without overpowering it. Serve with hand-cooked crisps and crisp cornichons for the ultimate lunchtime indulgence.
Recipe Note
Don't have Dijon mayonnaise? Simply stir 1 teaspoon of Dijon mustard into 3 tablespoons of good-quality mayonnaise for a quick homemade version.
