Wagyu beef strips with sticky chilli sauce

Step 1 Slice your preferred cut of wagyu into even strips and set aside.

Step 2 In a small bowl, combine the chilli jam, water, soy sauce and red wine vinegar and set aside.

Step 3 Heat the oil in a searingly hot frying pan, then add the wagyu strips and stir-fry quickly so they caramelise. Once they are just browned, add the bowl of chilli jam sauce. Let it reduce for a minute or two until it becomes glossy and sticky, coating the beef. Remove from the heat.

Step 4 Spoon hot rice into bowls and pile the sticky wagyu on top. Add a generous mound of braised red cabbage, then finish with sliced spring onion, coriander leaves and sesame seeds. Serve immediately while everything is steaming and fragrant.
