We start with carefully selected British pork belly, which is rubbed with a mix of salt and sugar before being infused with juniper, black pepper, bay leaves and fragrant herbs. After a 48-hour cure to maximise flavour, the pork is gently slow-cooked to perfection over 14 hours until meltingly tender.

Serve it warm with buttery mash or creamy dauphinoise and seasonal greens—or slice cold for salads or sandwiches with a spoonful of punchy pickle. Comfortably serves two.

COOKING INSTRUCTIONS

Heating Guide: Pork Belly Confit is already cooked and can be eaten cold but to get the best from it we recommend that you warm it through in a frying pan over a medium heat until warm throughout. There is no need to add oil or lard to the pan.
