Our chicken and bacon club sandwich is deliciously layered and brimming with meaty goodness. This streaky bacon recipe will help you to create a classic pub favourite at home, all in a matter of minutes.

Directions

  1. Step 1 Grill the bacon until crispy and set aside.

  1. Step 2 Line a baking tray with greaseproof paper. Butterfly the chicken breasts by slicing each breast vertically through the middle without cutting all the way through. Open out the breast and gently flatten with your hands to create an even surface. Place the chicken on the prepared baking tray, oil with olive oil and season generously with salt and pepper. Grill for 6 minutes, turning halfway through until cooked through. Slice and set aside.

  1. Step 3 Lightly toast the bread. Spread with mayonnaise instead of butter.

  1. Step 4 To assemble the chicken and bacon club sandwich, place the sliced chicken neatly over one slice of toast with mayonnaise, then add the tomato slices. Add the second slice of toast, then add the crispy bacon, lettuce, and basil. Crown with a slice of toast. Slice in half and skewer each slice to keep the contents intact. Serve with fries or crisps.
