Crafted using traditional methods, each rasher is hand cured with the finest salt and brown sugar, then air dried slowly to develop a deep, savoury flavour and firm texture. We never use the modern 'cure in the bag' method that traps water and leads to the dreaded white goo during cooking. Instead, our bacon crisps beautifully, sizzles properly, and tastes exactly as bacon should.
