COOKING INSTRUCTIONS

Cooking guidelines: remove all packaging and allow to come to room temperature for 60 minutes before cooking. Calculate cooking time allowing 50 minutes per kg (e.g a 2.5kg joint would take approximately 2 hours 5 minutes). Preheat oven to 190°C / fan 170°C / gas 5. Place the joint into a roasting tray. Brush lightly with oil and season with salt and pepper, cover loosely with foil and roast the joint for the calculated time, basting occasionally with the pan juices. 20 minutes before the end, remove the foil and continue to cook until skin becomes crispy. Check occasionally to ensure it does not overcook. Ensure the joint is piping hot throughout and the juices run clear when the thickest part is pierced with a skewer. Once your joint is fully cooked, remove from the oven, cover with foil, and leave to rest in a warm place for at least 20 minutes. Cooking appliances vary in performance, these are guidelines only.
