PRODUCT DESCRIPTION
Made with raw sheep's milk and vegetarian rennet this lovely, firm cheese is nutty and sweet with lovely caramel notes and savoury undertones.
It is matured for six months resulting in a texture that is slightly flaky, comparable to Manchego or Pecorino, and as it hardens Parmesan. Perfect with a glass of wine, it also makes a great substitute for Parmesan in pasta and risotto dishes. Suitable for vegetarians.
