Peel the potato and coarsely grate it. Place the grated potato into a clean tea towel or some kitchen paper and squeeze out as much moisture as possible. Place the grated potato into a large bowl, then add the grated cheese. Season with a little salt and pepper. Remove the sausage meat from the casings and add it to the bowl. Crumble in the black pudding and mix together. Combine this mixture with the grated potato until well incorporated.
- Heat a little oil in a non-stick frying pan over medium heat. Shape the sausage, black pudding, and potato mixture into two rösti patties. Fry for about 8-10 minutes per side, or until golden and crisp on the outside and cooked through in the middle. Transfer to a warm plate and keep covered.
- In the same pan, fry the bacon until crisp and golden. Set aside with the rösti. Crack the eggs into the pan and fry to your liking.
